This Cinnamon Spice Biscotti is exactly the simple treat that you are in need of to spice up your coffee (or hot chocolate) break! The cinnamon and sugar combination that gets dusted on top as a final step results in a satisfying carmelization!
Cinnamon Spice Biscotti
Ingredients
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 4 Tbsp. butter
- 2 large eggs
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/4 tsp. ground ginger
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground cloves
For Cinnamon Sugar:
- 1/4 cup white sugar
- 1/2 tsp. cinnamon
Directions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper. In a large bowl combine the white sugar, brown sugar, eggs, vanilla, butter, cinnamon, nutmeg, ginger and cloves. Mix until everything is evenly incorporated, and it has a creamy texture (by hand or mixer).
- In a smaller bowl combine the flour, salt and baking powder. Stir them until they are evenly combined. Add the flour mixture to the bowl of wet ingredients and stir it until a soft dough forms.
- Using your hands (dust with flour if needed) shape the dough into two logs about 3 inches wide and 14 inches long. Bake in the oven for 35 minutes or until golden brown.
- Remove the logs from the oven and carefully transfer to a cutting board. Using a serrated knife, gently slice the logs diagonally into 1 inch thick pieces (see photos below).
- Place the slices back on the baking sheet. Sprinkle the tops with a mixture of cinnamon and sugar and bake for 5-7 minutes. Flip the pieces over, sprinkle the other side with cinnamon and sugar and bake for another 5-7 minutes. Let the biscotti cool on a wire rack before packaging or storing in an airtight container.
